Zucchini Fritters with Lemon Yogurt Dip
Golden pan-fried zucchini fritters with a cool lemon yogurt dip. A tasty way to use up summer zucchini, with the grated zucchini squeezed dry so the fritters crisp up.
Ingredients

- 240 ml greek yogurt, plain, unsweetened1.01 cup greek yogurt, plain, unsweetened

- 180 ml breadcrumbs12.17 tbsp breadcrumbs
- 2 each egg, lightly beaten

- 2.5 ml garlic powder0.51 tsp garlic powder
- 60 ml olive oil, extra-virgin, for frying4.06 tbsp olive oil, extra-virgin, for frying
- salt (to taste), for over-1s and adults
- dill (for serving), chopped
Steps
Lemon Yogurt Dip
- Whisk the Greek yogurt, lemon zest, and lemon juice in a small bowl until smooth, then cover and chill until serving time.
Prep the Zucchini
- Grate the zucchini on the large holes of a box grater into a colander set in the sink.
- Let the grated zucchini sit for 10 minutes, then wrap it in a clean cloth and squeeze out as much water as you can.
Make and Cook the Fritters
- Add the squeezed zucchini, breadcrumbs, eggs, chives, and garlic powder to a large bowl and fold until evenly combined.
- Heat the olive oil in a large nonstick skillet over medium heat until it shimmers.
- Scoop the mixture into small flat rounds and fry in batches until golden, about 2 to 3 minutes per side.
- Transfer to a plate, scatter with dill, and serve warm with the dip. For over-1s and adults, add a pinch of salt to taste.

Tips by age
Skip any added salt. Cook fritters thin and soft, then cut into bite-size strips your child can pick up. Offer a little dip on the side.
