Golden pan-fried zucchini fritters with a cool lemon yogurt dip. A tasty way to use up summer zucchini, with the grated zucchini squeezed dry so the fritters crisp up.

  • 240 ml greek yogurt, plain, unsweetened1.01 cup greek yogurt, plain, unsweetened

  • salt (to taste), for over-1s and adults
  • dill (for serving), chopped

Steps

Lemon Yogurt Dip

  1. Whisk the Greek yogurt, lemon zest, and lemon juice in a small bowl until smooth, then cover and chill until serving time.

Prep the Zucchini

  1. Grate the zucchini on the large holes of a box grater into a colander set in the sink.
  2. Let the grated zucchini sit for 10 minutes, then wrap it in a clean cloth and squeeze out as much water as you can.

Make and Cook the Fritters

  1. Add the squeezed zucchini, breadcrumbs, eggs, chives, and garlic powder to a large bowl and fold until evenly combined.
  2. Heat the olive oil in a large nonstick skillet over medium heat until it shimmers.
  3. Scoop the mixture into small flat rounds and fry in batches until golden, about 2 to 3 minutes per side.
  4. Transfer to a plate, scatter with dill, and serve warm with the dip. For over-1s and adults, add a pinch of salt to taste.

Tips by age

12-18mo

Skip any added salt. Cook fritters thin and soft, then cut into bite-size strips your child can pick up. Offer a little dip on the side.

Choking safety: Cut into small soft strips and avoid large round pieces that could block the airway.

18-24mo

Serve fritters cut into halves or quarters with the lemon yogurt dip alongside for dunking. Keep salt out of their portion.

Choking safety: Quarter the fritters so there are no large round pieces.

2-3y

Serve a whole small fritter or halves with the dip. Encourage self-dipping. Add only a tiny pinch of salt if you season at all.
