Tomato Egg Drop Noodle Soup

  • 80 g noodles, dried2.82 oz noodles, dried
  • 30 ml vegetable oil2.03 tbsp vegetable oil
  • 1 each garlic, minced
  • 2 each scallion, whites and greens separated and chopped
  • 2 medium tomato, chopped
  • 600 ml chicken stock, low-sodium2.54 cup chicken stock, low-sodium
  • 5 ml soy sauce, low-sodium1.01 tsp soy sauce, low-sodium
  • 2.5 ml sesame oil0.51 tsp sesame oil
  • 1 each egg, beaten
  • white pepper (to taste), for older eaters
  • salt (to taste), for older eaters

Steps

Cook the Noodles

  1. Cook the noodles in a pot of boiling water following the package timing, then drain well.
  2. Transfer the noodles to a large bowl and toss with a few drops of oil so they do not stick together.

Make the Soup

  1. Heat the vegetable oil in a wok or pot over medium heat, then add the garlic and scallion whites and cook for 30 seconds.
  2. Add the chopped tomatoes and stir-fry for about 2 minutes until they soften and the oil starts to turn red.
  3. Pour in the stock, soy sauce, and sesame oil, then cover and simmer over medium heat for 3 minutes.
  4. While the soup simmers, beat the egg in a small bowl so it is ready to pour.

Finish

  1. Uncover the pot, raise the heat slightly, and slowly stir in the beaten egg so it forms soft ribbons.
  2. Turn off the heat, pour the soup over the noodles, and top with the chopped scallion greens.
  3. For over-1s and adults, stir in a pinch of salt and white pepper to taste at the very end.

Cut the noodles into short pieces and chop the tomato small. Offer the egg in soft, easy-to-pinch bits. Use low-sodium stock and skip the added salt and pepper.
