Ingredients

  • 100 g onion, finely diced3.53 oz onion, finely diced
  • 150 g carrot, finely diced5.29 oz carrot, finely diced
  • 120 g celery, finely diced4.23 oz celery, finely diced
  • 2 each garlic, minced
  • 60 ml olive oil4.06 tbsp olive oil
  • 150 g bacon, diced5.29 oz bacon, diced
  • 800 g tomato, canned, with juice1.76 lb tomato, canned, with juice
  • 1 l chicken stock, low-sodium4.23 cup chicken stock, low-sodium
  • 15 ml italian herbs, dried1.01 tbsp italian herbs, dried
  • salt (to taste), for over-1s and adults
  • black pepper (to taste), for over-1s and adults

Steps

Prep the Vegetables

  1. Finely dice the onion, celery, carrot, and garlic. A quick blitz in a food processor for about 30 seconds works well here.
  2. Dice the bacon into small, even pieces so it cooks quickly and evenly.

Make the Soup

  1. Heat the olive oil in a large saucepan over medium heat until it shimmers.
  2. Add the bacon and diced vegetables and saute for about 3 minutes until fragrant and the bacon is cooked through.
  3. Pour in the tomatoes, stock, and Italian herbs, then stir to combine well.
  4. Simmer gently for at least 7 minutes, or up to an hour for deeper flavor, stirring now and then.
  5. Blend until smooth for younger eaters, then serve warm. For over-1s and adults, add salt and pepper to taste.

Tips by age

12-18mo

Blend completely smooth and serve a small amount warm, not hot. Use low-sodium stock and the smallest amount of bacon, since bacon is salty for little ones.

Choking safety: Make sure the soup is fully blended with no firm vegetable or bacon pieces.

18-24mo

Serve smooth or lightly textured with very soft, finely chopped bits. Keep bacon to a small amount and use low-sodium stock to limit salt.

Choking safety: Avoid chewy bacon pieces; chop any solids very small.

2-3y

Serve warm as a soup with crusty bread torn into small pieces for dipping. Still go light on added salt at this age.

Choking safety: Tear bread into small pieces and offer chewy bacon only when finely chopped.

3-5y

Serve as written in a bowl with bread on the side. You can add a pinch of salt and pepper to taste at this age.
