Spiced Potato Sandwich (Aloo Sandwich)
Soft mashed potato gently spiced with ginger, garam masala, and lemon, tucked between toasted buttered bread for a warm, easy meal.

- 2 medium potato, boiled and peeled
- 2.5 ml ginger, grated0.51 tsp ginger, grated
- 1.25 ml garam masala0.25 tsp garam masala
- 0.6 ml turmeric0.12 tsp turmeric
- 15 ml lemon juice1.01 tbsp lemon juice
- 15 ml coriander leaf, chopped1.01 tbsp coriander leaf, chopped
- 5 ml ghee1.01 tsp ghee
- 4 each bread, slices
- 30 ml butter, softened2.03 tbsp butter, softened

- salt (to taste), for older eaters only
Steps
Make the Potato Filling
- Boil or steam the potatoes whole until fork tender, then cool them, peel, and set aside.
- In a mixing bowl, combine the grated ginger, garam masala, and turmeric.
- (Optional) Heat the ghee in a small pan and pour it over the spices to bring out their aroma.
- Add the boiled potatoes and mash everything together until smooth and well combined.
- Once the mixture cools slightly, squeeze in the lemon juice and stir in the chopped coriander.
- For older kids and adults, you can add a pinch of salt to the filling to taste before assembling.
Assemble and Toast
- Spread butter over one side of each bread slice, and spread a little green chutney on the other side if using.
- Spoon the potato filling onto two slices, then top with the remaining slices, buttered side facing out.
- Toast the sandwiches in a preheated toaster or on a griddle until golden and crisp, then cut and serve warm.
