  • 2 medium potato, boiled and peeled
  • 2.5 ml ginger, grated0.51 tsp ginger, grated
  • 1.25 ml garam masala0.25 tsp garam masala
  • 0.6 ml turmeric0.12 tsp turmeric
  • 15 ml lemon juice1.01 tbsp lemon juice
  • 15 ml coriander leaf, chopped1.01 tbsp coriander leaf, chopped
  • 5 ml ghee1.01 tsp ghee
  • 4 each bread, slices
  • 30 ml butter, softened2.03 tbsp butter, softened
  • green chutney (optional)
  • salt (to taste), for older eaters only

Steps

Make the Potato Filling

  1. Boil or steam the potatoes whole until fork tender, then cool them, peel, and set aside.
  2. In a mixing bowl, combine the grated ginger, garam masala, and turmeric.
  3. (Optional) Heat the ghee in a small pan and pour it over the spices to bring out their aroma.
  4. Add the boiled potatoes and mash everything together until smooth and well combined.
  5. Once the mixture cools slightly, squeeze in the lemon juice and stir in the chopped coriander.
  6. For older kids and adults, you can add a pinch of salt to the filling to taste before assembling.

Assemble and Toast

  1. Spread butter over one side of each bread slice, and spread a little green chutney on the other side if using.
  2. Spoon the potato filling onto two slices, then top with the remaining slices, buttered side facing out.
  3. Toast the sandwiches in a preheated toaster or on a griddle until golden and crisp, then cut and serve warm.

Skip the green chutney and keep spices very mild. Cut the toasted sandwich into thin finger-length strips so little hands can grip and gum them easily.
