Soft Congee with Chicken

A slow-simmered Chinese rice porridge with finely shredded chicken, soft and soothing and easy to digest.

Ingredients

  • 80 ml white rice, rinsed5.41 tbsp white rice, rinsed
  • 60 g chicken breast, boneless, skinless2.12 oz chicken breast, boneless, skinless

Steps

  1. Rinse the rice well, then combine with 2 cups of water in a pot.
  2. Bring to a simmer and cook on low, stirring often, for about 35 minutes until the rice breaks down into a soft porridge.
  3. Gently poach the chicken in the congee for the last 12 minutes until cooked through.
  4. Remove the chicken, shred it very finely, then stir it back in.
  5. Let cool to just warm and serve soft and scoopable.
