Soft Congee with Chicken
A slow-simmered Chinese rice porridge with finely shredded chicken, soft and soothing and easy to digest.

Ingredients
- 80 ml white rice, rinsed5.41 tbsp white rice, rinsed
- 60 g chicken breast, boneless, skinless2.12 oz chicken breast, boneless, skinless
Steps
- Rinse the rice well, then combine with 2 cups of water in a pot.
- Bring to a simmer and cook on low, stirring often, for about 35 minutes until the rice breaks down into a soft porridge.
- Gently poach the chicken in the congee for the last 12 minutes until cooked through.
- Remove the chicken, shred it very finely, then stir it back in.
- Let cool to just warm and serve soft and scoopable.
