Cheerful slice and bake cookies with white chocolate chips and a colorful sprinkle crust all around the edge. A fun bake to make with little helpers.

Ingredients

  • 125 g butter, softened4.41 oz butter, softened
  • 180 ml brown sugar12.17 tbsp brown sugar
  • 1 each egg
  • 5 ml vanilla extract1.01 tsp vanilla extract
  • 480 ml flour2.03 cup flour
  • 2.5 ml baking powder0.51 tsp baking powder
  • 120 ml white chocolate chips8.12 tbsp white chocolate chips
  • 120 ml sprinkles8.12 tbsp sprinkles
  • salt (to taste), for over-1s, add a tiny pinch to the dough

Steps

Make the Dough

  1. Cream the butter and brown sugar together until the mixture looks pale, light, and fluffy, about 2 to 3 minutes.
  2. Add the egg and vanilla extract, then beat until everything is smooth and well combined.
  3. Add the flour and baking powder and mix gently until a soft dough just comes together.
  4. Fold the white chocolate chips evenly through the cookie dough.

Chill and Coat

  1. Shape the dough into a log and wrap it in plastic film, smoothing it into an even round shape.
  2. Chill in the fridge or freezer until firm enough to slice cleanly but not rock hard, about 1 to 2 hours.
  3. Unwrap the chilled log and roll it firmly in the sprinkles so they coat all the way around the edge.

Bake

  1. Preheat the oven to 180 C (360 F) and line a baking tray with baking paper.
  2. Slice the dough into rounds about 1 cm thick and lay them flat on the lined tray with a little space between each.
  3. Bake for 10 to 12 minutes until set and just pale, not deeply golden. Cool on the tray for 5 minutes, then move to a rack.

These are a sweet occasional treat, so offer one small cookie. Break each cookie into smaller pieces and let your toddler eat sitting down.
