Steps
Make the Dough
- Cream the butter and brown sugar together until the mixture looks pale, light, and fluffy, about 2 to 3 minutes.
- Add the egg and vanilla extract, then beat until everything is smooth and well combined.
- Add the flour and baking powder and mix gently until a soft dough just comes together.
- Fold the white chocolate chips evenly through the cookie dough.
Chill and Coat
- Shape the dough into a log and wrap it in plastic film, smoothing it into an even round shape.
- Chill in the fridge or freezer until firm enough to slice cleanly but not rock hard, about 1 to 2 hours.
- Unwrap the chilled log and roll it firmly in the sprinkles so they coat all the way around the edge.
Bake
- Preheat the oven to 180 C (360 F) and line a baking tray with baking paper.
- Slice the dough into rounds about 1 cm thick and lay them flat on the lined tray with a little space between each.
- Bake for 10 to 12 minutes until set and just pale, not deeply golden. Cool on the tray for 5 minutes, then move to a rack.
