Peanut and Jaggery Chikki (Indian Peanut Brittle)
A traditional Indian brittle made from roasted peanuts set in melted jaggery. It sets hard and crisp, so it suits older kids as an occasional treat.
Ingredients
- 150 g peanut, roasted, skinned and coarsely crushed5.29 oz peanut, roasted, skinned and coarsely crushed
- 140 g jaggery, grated4.94 oz jaggery, grated
- 15 ml water1.01 tbsp water
- 5 ml ghee1.01 tsp ghee
Steps
Roast the Peanuts
- Roast the peanuts in a heavy pan over medium-low heat, stirring often, until deep golden and aromatic, about 8 to 10 minutes.
- Let the peanuts cool, then wrap them in a clean cloth and rub gently to loosen the skins.
- Rub the peanuts with the base of a cup to separate them fully from the skins, then discard the skins.
- Crush the peanuts coarsely with the base of a cup for 2 to 3 minutes to release their nutty aroma, then set aside.
Make the Jaggery Syrup
- Grease a steel plate and a rolling pin with a little ghee so the hot mixture will not stick later.
- Grate the jaggery into a heavy pan, add 1 tablespoon water, and melt over low heat until fully dissolved.
- If you see any impurities, strain the melted jaggery through a coffee filter, then return it to the pan.
- Stir in the ghee, then boil the syrup over low heat until it reaches a hard, brittle stage.
- Test by dropping a little syrup into a bowl of cold water. It should harden at once and snap cleanly without any threads.
Combine and Set
- Turn off the heat right away so the jaggery does not burn, then stir in the crushed peanuts and mix well.
- Quickly pour the mixture onto the greased plate and spread it into a rectangle with a spatula.
- Roll the mixture flat and even with the greased rolling pin while it is still hot.
- Cut into pieces while still slightly warm, then cool completely and store in an airtight jar.

Tips by age
Offer only as a rare treat and break into very small, thin shards no larger than a fingertip. Sit with your child while they eat and let it dissolve and soften in the mouth rather than crunching hard.
Choking safety: Hard brittle and whole peanut pieces are a high choking risk under about 4. Break into tiny thin shards and supervise closely, or skip this recipe for this stage.
Serve in small bite-size pieces as an occasional sweet treat. Encourage your child to sit and eat calmly rather than chewing in a hurry.
