Peach Rice Pudding with Vanilla and Cinnamon
A gentle, creamy rice pudding made with soft peaches, vanilla, and a little cinnamon, blended with coconut milk for a comforting baby and toddler treat.
Ingredients
- 4 medium peach, peeled and pitted
- 2.5 ml ground cinnamon0.51 tsp ground cinnamon
- 2.5 ml vanilla extract0.51 tsp vanilla extract
- 60 ml white basmati rice, rinsed4.06 tbsp white basmati rice, rinsed
- 120 ml water8.12 tbsp water
- 180 ml coconut milk12.17 tbsp coconut milk
Steps
Cook the Peaches
- Peel the peaches, remove the pits, and chop the flesh into rough chunks.
- Cook the peaches and cinnamon in a saucepan over medium heat for about 10 minutes until very soft and tender.
- Transfer the peaches to a blender and pulse in short bursts until smooth, then spoon into a bowl and set aside.
Cook the Rice
- Rinse the rice, then cook it in the water over low heat until soft and the liquid is absorbed, about 12 to 15 minutes.
- Add the cooked rice, vanilla, and half of the coconut milk to the blender and pulse until smooth, adding more coconut milk to loosen as needed.
Combine
- Stir the peach puree into the rice mixture until evenly combined, then serve warm or chilled after checking the temperature.
