Parmesan Roasted Cauliflower

  • 0.5 medium cauliflower, cut into florets
  • 45 ml parmesan cheese, finely grated3.04 tbsp parmesan cheese, finely grated
  • 45 ml olive oil3.04 tbsp olive oil
  • 5 ml onion powder1.01 tsp onion powder
  • 2.5 ml garlic powder0.51 tsp garlic powder
  • 2.5 ml paprika0.51 tsp paprika
  • salt (to taste), for over-1s and adults only

Steps

  1. Heat the oven to 160C (320F) and line a baking tray with parchment paper.
  2. In a small bowl, stir together the parmesan, paprika, onion powder, and garlic powder.
  3. Cut the cauliflower into even florets about 1 cm thick so they cook at the same rate.
  4. Add the florets to a large bowl, pour over the olive oil, and toss until evenly coated.
  5. Sprinkle over the parmesan and spice mix, then toss again so the florets are well covered.
  6. Spread the florets in a single layer on the tray and roast for 30 minutes until tender.
  7. (Optional) For crispier edges, raise the oven to 200C (400F) and roast for 5 more minutes.
  8. Let the cauliflower cool slightly. For over-1s and adults, add a pinch of salt and pepper to taste before serving.

Serve as written, cut into bite-size florets. A crispier batch from the higher-heat option makes a fun finger food at this age.

12-18mo

Roast the florets until very soft so they squash easily between fingers. Cut into finger-size pieces and skip any added salt for this age. Parmesan is naturally salty, so use a light hand.

Choking safety: Firm or undercooked florets can be a choking risk. Make sure each piece is soft enough to mash and not too large.

18-24mo

Serve soft florets cut into small bite-size pieces. Hold off on added salt and keep the parmesan amount modest for the youngest eaters.
