Mini Vegetable and Cheese Egg Muffins

Fluffy little egg muffins packed with grated zucchini, carrot, capsicum, and cheese. Great for breakfast, lunch, or a snack, and easy to make ahead.

Ingredients

  • 4 each egg
  • 2.5 ml onion powder0.51 tsp onion powder
  • 0.5 medium zucchini, grated and squeezed dry
  • 0.5 medium carrot, grated and squeezed dry
  • 0.5 medium red capsicum, finely diced
  • 50 g cheese, grated1.76 oz cheese, grated

Steps

  1. Preheat your oven to 180 C (360 F) and lightly grease a 24-cup mini muffin tray so the muffins lift out cleanly.
  2. Crack the eggs into a bowl, add the onion powder, and whisk until well combined.
  3. Grate the zucchini and carrot, then squeeze the gratings firmly in your hands to remove as much moisture as you can.
  4. Finely dice the red capsicum into small, even pieces so it cooks through evenly.
  5. Stir the grated zucchini and carrot, diced capsicum, and grated cheese into the whisked eggs until evenly mixed.
  6. Spoon the mixture into the muffin cups, filling each one almost to the top.
  7. Bake for 10 to 12 minutes until the eggs are set and spring back lightly when touched.
  8. Let the muffins cool in the tray for a few minutes, then gently lift them out and serve warm or cool. For over-1s and adults, add a pinch of salt to taste.

9-11mo

Offer one whole soft muffin as a finger food so baby can grab and gum it, or break it into pillowy pieces on the tray. Make sure the vegetables are finely grated and soft.

Choking safety: Ensure capsicum is very finely diced and soft. Break or flatten large pieces so they are easy to gum.

12-18mo

Serve a whole muffin or halved for easier grip. Use a lower-sodium cheese in small amounts for the youngest eaters.
