Mild Chicken and Vegetable Coconut Curry

  • 0.5 medium red bell pepper, finely diced
  • 240 ml full fat coconut milk1.01 cup full fat coconut milk
  • 480 ml brown rice, cooked2.03 cup brown rice, cooked

Steps

Cook the Rice

  1. Cook the brown rice according to the package directions, then keep it warm and covered while you make the curry.

Make the Curry

  1. Heat the olive oil in a medium pot over medium heat, then add the onion and garlic and cook until tender, about 4 minutes.
  2. Add the cubed chicken and cook for 4 to 5 minutes, stirring often, until browned on the outside.
  3. Stir in the tomato paste, curry powder, and ginger for 1 minute so the chicken is well coated.
  4. Add the carrot, peas, red pepper, and coconut milk, then bring to a gentle simmer over medium heat.
  5. Reduce the heat and simmer for 8 to 10 minutes until the chicken is cooked through and the vegetables are soft.
  6. Let the curry cool slightly, then spoon it over the brown rice and serve warm.
