Mawa Barfi (Indian Milk Fudge)
A soft Indian milk fudge made from mawa, gently flavored with rose and cardamom and topped with finely chopped nuts. A sweet treat for occasional sharing.
Ingredients
- 500 g mawa, crumbled, at room temperature1.1 lb mawa, crumbled, at room temperature
- 180 ml sugar12.17 tbsp sugar
- 5 ml rose essence1.01 tsp rose essence
- 0.63 ml cardamom powder0.13 tsp cardamom powder
- 30 ml mixed nuts, finely chopped2.03 tbsp mixed nuts, finely chopped
- ghee (optional), for greasing the tray
- milk powder (optional), only if the mixture will not set
Steps
- Lightly grease a tray or a sheet of foil with a little ghee and set it aside.
- Bring the mawa to room temperature, then crumble it finely into a nonstick pan.
- Add the sugar, rose essence, and cardamom powder to the crumbled mawa.
- Cook over low heat, stirring constantly and gently, until the sugar melts and the mixture turns gooey.
- Keep stirring for a few minutes until the mixture comes together into a single soft mass.
- Transfer the mixture to the greased tray and spread it evenly with a spatula.
- Scatter the chopped nuts over the top and press them gently into the surface.
- Let it cool completely, then cut into small squares or diamonds with a knife.
- (Optional) If the barfi stays sticky and will not set, knead in a little milk powder, then press flat and cut.
- Store in an airtight container in the fridge and use within 3 to 4 days.
