Mashed Lentil and Carrot Mash
Soft red lentils mashed with sweet carrot, an iron and protein rich mash that holds well on a spoon.

Ingredients
- 80 ml red lentils, rinsed5.41 tbsp red lentils, rinsed
- 1 medium carrot, peeled and chopped
- 5 ml olive oil1.01 tsp olive oil
Steps
- Rinse the red lentils well under cool water.
- Combine the lentils and chopped carrot with 1 cup of water in a saucepan.
- Bring to a simmer and cook covered for about 20 minutes until the lentils are very soft and the carrot is tender.
- Mash everything together with a fork to a soft, scoopable texture.
- Stir in the olive oil and let cool to just warm before serving.
