Ingredients

  • 80 ml red lentils, rinsed5.41 tbsp red lentils, rinsed
  • 1 medium carrot, peeled and chopped
  • 5 ml olive oil1.01 tsp olive oil

Steps

  1. Rinse the red lentils well under cool water.
  2. Combine the lentils and chopped carrot with 1 cup of water in a saucepan.
  3. Bring to a simmer and cook covered for about 20 minutes until the lentils are very soft and the carrot is tender.
  4. Mash everything together with a fork to a soft, scoopable texture.
  5. Stir in the olive oil and let cool to just warm before serving.
