Healthy Easy Apple and Carrot Muffins

Ingredients

  • 1 carrot
  • 1 apple
  • 1 cup spelt flour
  • 2 tbsp ground flaxseed
  • 1 tsp baking soda
  • 0.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 3 tbsp olive oil
  • 0.25 cup maple syrup
  • demerara sugar
  • 1 egg

Steps

  1. Preheat the oven to 180 degrees bake.
  2. Lightly grease a muffin tray (a silicon one works well for ease).
  3. Break the egg into a large bowl and mix with a fork.
  4. Place in all ingredients (except sugar) and mix well with a spoon.
  5. Spoon the mixture evenly into the muffin holes and sprinkle tops with sugar.
  6. Place in the oven and bake for approximately 10-15 minutes, until mini muffin tops are golden and cooked through.
  7. Take out and leave to cool slightly before serving.
