Grain-Free Mussel Fritters

Grain-free fritters made with mussels, eggs, carrot and almond meal. A favorite creation from the Baby and Toddler Cookbook.

Ingredients

  • 12 mussel
  • 3 egg
  • 1 carrot
  • 1 tbsp parsley
  • 1 lemon zest
  • 0.5 cup almond meal
  • salt
  • pepper
  • olive oil

Steps

  1. Place cooked mussel meat into the baby food maker or a processor and whizz to a smooth texture.
  2. Break eggs into a medium-sized bowl and whisk with a fork. Add in the mussel mixture.
  3. Grate the carrot. Place on to a paper towel or cloth and squeeze out excess water. Place into the bowl.
  4. Add parsley, lemon zest and almond meal. Season to taste and mix to combine with a spoon.
  5. Heat a frypan on a medium heat, add oil and reduce heat down to low.
  6. Cook one fritter first just to test texture. You can always add a little more almond meal if necessary. One large heaped tablespoon per fritter mixture works well.
