Honey Rice Bubble Crackle Slice

A crunchy no-bake slice of crisp rice cereal set in a light honey caramel. A sweet little treat to cut into squares and share.

Ingredients

  • 125 g butter4.41 oz butter
  • 60 ml sugar4.06 tbsp sugar
  • 45 ml honey3.04 tbsp honey
  • 5 ml vanilla extract1.01 tsp vanilla extract
  • 1.2 l crisp rice cereal5.07 cup crisp rice cereal

Steps

  1. Line a 20 cm by 25 cm tin with baking paper, leaving an overhang so the set slice lifts out easily later.
  2. Melt the butter, sugar, and honey together in a saucepan over medium heat, stirring until smooth.
  3. Bring the mixture to a boil and cook for about 3 minutes until it turns light caramel and starts to thicken.
  4. Test it by running a wooden spoon through the middle; it is ready when the channel holds for a few seconds.
  5. Remove from the heat and stir in the vanilla. The mixture will bubble a little as you do this.
  6. Add the rice bubbles and stir gently until every piece is evenly coated in the caramel.
  7. Tip the mixture into the lined tin and press it down firmly with a spatula into an even, compact layer.
  8. Refrigerate for 30 to 60 minutes until firm, then lift out and slice into small squares to serve.
  9. Once set, store the squares in an airtight container at room temperature for a few days.
