Homemade Baby Custard

A simple sugar-free custard made with milk, egg yolk, and a little cornflour, sweetened naturally with fruit puree.

Ingredients

  • 165 ml milk11.16 tbsp milk
  • 1 each egg yolk
  • 5 ml cornflour1.01 tsp cornflour
  • fruit puree (for serving), smooth, unsweetened

Steps

  1. Heat the milk in a small saucepan over medium heat until it just begins to boil, then remove it from the heat.
  2. Whisk the egg yolk and cornflour together in a heatproof bowl to form a smooth paste with no lumps.
  3. Slowly pour the hot milk over the egg and cornflour paste, whisking constantly until it is well combined.
  4. Return the mixture to the saucepan and cook over low heat, stirring regularly, until the custard thickens.
  5. Stir a spoonful of fruit puree through the warm custard to sweeten, then cool until just warm before serving.
