Homemade Baby Custard
A simple sugar-free custard made with milk, egg yolk, and a little cornflour, sweetened naturally with fruit puree.
Ingredients
- 165 ml milk11.16 tbsp milk
- 1 each egg yolk
- 5 ml cornflour1.01 tsp cornflour
- fruit puree (for serving), smooth, unsweetened
Steps
- Heat the milk in a small saucepan over medium heat until it just begins to boil, then remove it from the heat.
- Whisk the egg yolk and cornflour together in a heatproof bowl to form a smooth paste with no lumps.
- Slowly pour the hot milk over the egg and cornflour paste, whisking constantly until it is well combined.
- Return the mixture to the saucepan and cook over low heat, stirring regularly, until the custard thickens.
- Stir a spoonful of fruit puree through the warm custard to sweeten, then cool until just warm before serving.
