Gluten-Free Sugar Cookies

Ingredients

  • 125 g butter, softened4.41 oz butter, softened
  • 150 g caster sugar5.29 oz caster sugar
  • 1 large egg
  • 10 ml vanilla extract2.03 tsp vanilla extract
  • 5 ml vinegar1.01 tsp vinegar
  • 340 g gluten-free flour11.99 oz gluten-free flour
  • 1.25 ml baking powder0.25 tsp baking powder
  • salt (to taste), for over-1s and adults only

Steps

Make the Dough

  1. Soften the butter until it is spreadable but not melted. Leave it at room temperature, or microwave it briefly on low power.
  2. Sift the gluten-free flour and baking powder into a bowl, or whisk them together to remove any lumps and spread the baking powder evenly.
  3. Beat the softened butter and caster sugar in a large bowl until the mixture is thick, creamy, and well combined.
  4. Add the egg, vanilla, and vinegar, then beat until the mixture is smooth and fully combined.
  5. (Optional) For over-1s and adults, beat in a tiny pinch of salt at this stage for a little extra flavor.
  6. Gradually beat in the flour mixture on low speed, scraping the bowl, until a soft, even dough comes together.

Chill and Shape

  1. Cover the dough and refrigerate it for 30 minutes so it firms up and is easier to roll out.
  2. Preheat your oven to 160C and line a baking tray with baking paper.
  3. Roll the dough out to about 4 to 5 mm thick on a sheet of baking paper for easy lifting.
  4. Cut out shapes with cookie cutters, lay them on the lined tray, and chill them again for a few minutes.

Bake

  1. Bake for 10 to 12 minutes, until the cookies are just firm and lightly golden at the edges and bottom.
  2. Let the cookies cool fully on the tray before icing or serving so they set and stay tender.

Offer half a cookie broken into smaller pieces as an occasional sweet treat, served with water or milk. Skip the icing or keep it very thin to limit added sugar.
