Fluffy Greek Yogurt Pancakes
Light, fluffy pancakes made with plain Greek yogurt and whole wheat flour, with a touch of maple syrup. A gentle, protein-rich breakfast or snack the whole family can share.

- 240 ml whole wheat flour1.01 cup whole wheat flour

Steps
Make the Batter
- Whisk the flour and baking powder together in a medium bowl until evenly combined.
- In a separate bowl, whisk the milk, eggs, melted butter, maple syrup, vanilla, and yogurt until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined, leaving a few small lumps.
Cook the Pancakes
- Heat a non-stick pan or griddle over medium-low heat until a drop of water sizzles gently on the surface.
- Pour 2 to 3 tablespoons of batter per pancake onto the pan, leaving a little space between each one.
- Cook for 2 to 3 minutes until small bubbles appear across the surface, then flip and cook 2 minutes more until golden.
- If the batter thickens between batches, stir in a tablespoon of milk at a time to loosen it back to a pourable consistency.
- Transfer cooked pancakes to a rack and repeat with the remaining batter. For over-1s and adults, add a pinch of salt to the batter to taste.
