Steps

Cook the Rice

  1. Rinse the rice well under cool water, then soak it in fresh water for 20 minutes and drain.
  2. Bring 2 cups of water to a boil, add the drained rice, and cook covered until tender and grainy, about 12 minutes.
  3. Spread the cooked rice on a plate and let it cool completely so the grains stay separate.

Temper and Saute

  1. Heat the oil in a pan over medium heat, then add the cumin seeds and the crushed garlic clove.
  2. Saute until the garlic is fragrant and lightly golden, about 1 minute.
  3. Add the green peas and fenugreek leaves and saute for 3 to 4 minutes until the leaves wilt completely.
  4. Stir in the garam masala and turmeric, mix well, then turn off the heat.

Combine

  1. Add the cooled rice to the pan and gently fold everything together until the rice is evenly coated.
  2. Squeeze in the lemon juice and mix. For over-1s and adults, add a pinch of salt to taste, and a little chili if you like heat.
