Ingredients
- 250 g sweet shortcrust pastry, thawed if frozen8.82 oz sweet shortcrust pastry, thawed if frozen
- 9 each candy coated chocolate egg
- 10 ml sprinkles, hundreds and thousands2.03 tsp sprinkles, hundreds and thousands
Steps
Shape the Cookies
- If the pastry is frozen, leave it on the counter to thaw, then preheat the oven to 180C (350F).
- Cut gingerbread-man shapes from the pastry sheet, re-rolling any offcuts to make about 9 cookies.
- Lay the shapes on a lined baking sheet with the legs pointing up, since the legs become the bunny ears.
Decorate
- Place a candy coated egg between the arms of each shape, then gently bend the arms over so they hold the egg.
- Above the egg, use a skewer to press two small eye holes and one nose hole into the pastry.
- Drop a single sprinkle into each eye and nose indentation to give the bunny its face.
- Optional: if the pastry has gone very soft, chill the tray in the fridge for 10 minutes to firm it up.
Bake
- Bake for about 6 minutes until the pastry is lightly golden, then let the cookies cool fully before serving.
