Crispy Chicken Parmesan

Tender chicken under a golden parmesan and panko crust, topped with marinara and melted mozzarella, all done quickly under the grill.

  • 360 ml panko breadcrumbs1.52 cup panko breadcrumbs

Steps

Crispy Topping

  1. Preheat your oven grill or broiler to high, using a setting that gives direct heat from the top of the oven.
  2. In a bowl, mix the panko breadcrumbs, olive oil, parmesan, and parsley until evenly combined and slightly moist. The oil helps the crumbs crisp up.

Cook the Chicken

  1. Place the chicken between two sheets of baking paper and gently pound the thickest parts until about 2 cm thick so it cooks evenly.
  2. Lay the chicken on a lined baking tray and press the breadcrumb mixture firmly over the top to cover each piece generously.
  3. Grill for 6 to 8 minutes until the crumbs are golden and the chicken is cooked through to 74C in the thickest part.

Add Sauce and Cheese

  1. Spoon a generous amount of marinara sauce over each piece of chicken, then layer the mozzarella evenly on top.
  2. Return the tray under the grill for 3 to 4 minutes until the cheese is melted and bubbly. Serve with pasta or a simple salad.
