Crispy Chicken Parmesan
Tender chicken under a golden parmesan and panko crust, topped with marinara and melted mozzarella, all done quickly under the grill.
Ingredients
- 360 ml panko breadcrumbs1.52 cup panko breadcrumbs

- 600 g chicken breast1.32 lb chicken breast
- 240 ml marinara sauce, low-sodium where possible1.01 cup marinara sauce, low-sodium where possible
- 100 g mozzarella, shredded3.53 oz mozzarella, shredded
Steps
Crispy Topping
- Preheat your oven grill or broiler to high, using a setting that gives direct heat from the top of the oven.
- In a bowl, mix the panko breadcrumbs, olive oil, parmesan, and parsley until evenly combined and slightly moist. The oil helps the crumbs crisp up.
Cook the Chicken
- Place the chicken between two sheets of baking paper and gently pound the thickest parts until about 2 cm thick so it cooks evenly.
- Lay the chicken on a lined baking tray and press the breadcrumb mixture firmly over the top to cover each piece generously.
- Grill for 6 to 8 minutes until the crumbs are golden and the chicken is cooked through to 74C in the thickest part.
Add Sauce and Cheese
- Spoon a generous amount of marinara sauce over each piece of chicken, then layer the mozzarella evenly on top.
- Return the tray under the grill for 3 to 4 minutes until the cheese is melted and bubbly. Serve with pasta or a simple salad.
