Creamy Pumpkin Bow-Tie Pasta

- 453.6 g bow-tie pasta1 lb bow-tie pasta
- 15 ml olive oil1.01 tbsp olive oil
- 2 each garlic, minced
- 300 ml pumpkin puree1.27 cup pumpkin puree
- 30 ml tomato paste2.03 tbsp tomato paste
- 240 ml vegetable broth, low-sodium1.01 cup vegetable broth, low-sodium
- 60 ml heavy cream4.06 tbsp heavy cream
- 5 ml balsamic vinegar1.01 tsp balsamic vinegar
- 1.25 ml nutmeg, ground0.25 tsp nutmeg, ground
- salt (to taste), for over-1s and adults
- parmesan (for serving), grated
Steps
Cook the Pasta
- Bring a large pot of water to a boil and cook the bow-tie pasta until tender, following the package timing.
- Scoop out 1 cup of the pasta water, then drain the pasta and set it aside.
Make the Sauce
- Heat the olive oil in a large saucepan over medium heat, then add the garlic and cook for 1 to 2 minutes, stirring often.
- Stir in the pumpkin puree, tomato paste, and vegetable broth, and bring to a gentle simmer.
- Reduce the heat to low, then stir in the cream, balsamic vinegar, and nutmeg until the sauce is smooth.
Combine and Serve
- Add the drained pasta to the sauce and toss, adding the reserved pasta water a little at a time until the sauce is creamy.
- Spoon into bowls and top with grated parmesan if using. For over-1s and adults, add a pinch of salt to taste.
