Chicken and Rice Congee (Chicken Rice Porridge)
A soft, comforting chicken and rice porridge simmered with carrot, onion, and ginger. The pressure cooker does the work for a silky, soothing bowl.
Ingredients
Contains optional added salt for older eaters. Skip it for babies under 12 months.
- 2 each bone-in chicken thigh, skin removed
- 4 each garlic, peeled, whole cloves
- 0.5 medium yellow onion, peeled
- 1 medium carrot, peeled and chopped
- 5 g ginger, peeled and sliced0.18 oz ginger, peeled and sliced
- 240 ml short-grain rice, rinsed1.01 cup short-grain rice, rinsed
- 480 ml water2.03 cup water
- 960 ml low-sodium chicken broth4.06 cup low-sodium chicken broth
- salt (to taste), for over-1s and adults only
- green onion (for serving), chopped
Steps
Cook the Porridge
- Add the chicken thighs, garlic, onion, carrot, ginger, rice, water, and broth to the Instant Pot.
- Close the lid and set the valve to sealing. Pressure cook on high for 15 minutes. The pressure takes about 10 minutes to build first.
- Let the pressure release naturally, about 45 minutes. The porridge will look watery at this stage, which is normal.
Finish and Serve
- Carefully lift out the chicken, shred the meat with two forks, and discard the bones and skin.
- Mash the softened garlic against the side of the pot, then stir it through the porridge.
- Stir the shredded chicken back in and keep stirring until the porridge thickens. It thickens more as it sits.
- Ladle into bowls and top with chopped green onion. For over-1s and adults, add a little salt or low-sodium soy sauce to taste.

Tips by age
Serve a thick, soft portion. Finely shred or mince the chicken and mash any carrot pieces so the texture is smooth and easy to manage.
