Homemade Chicken Fried Rice
A quick and satisfying fried rice packed with vegetables and protein. Perfect for using up leftover rice and making a colorful meal toddlers will love.

Ingredients
- 3 cup rice
- 8 oz chicken breast
- 1 piece carrot
- 0.5 cup pea
- 0.5 cup corn
- 1 piece egg
- 1 tbsp low-sodium soy sauce
Steps
- Dice the chicken breast into small pieces.
- Finely chop the carrots.
- Sauté the chicken until cooked through.
- Add carrots, peas, and corn and stir-fry until tender-crisp.
- Add the cold, day-old cooked rice to the pan.
- Scramble in an egg.
- Season minimally with low-sodium soy sauce.
- Serve warm in a small bowl.
