Ingredients

  • 3 cup rice
  • 8 oz chicken breast
  • 1 piece carrot
  • 0.5 cup pea
  • 0.5 cup corn
  • 1 piece egg
  • 1 tbsp low-sodium soy sauce

Steps

  1. Dice the chicken breast into small pieces.
  2. Finely chop the carrots.
  3. Sauté the chicken until cooked through.
  4. Add carrots, peas, and corn and stir-fry until tender-crisp.
  5. Add the cold, day-old cooked rice to the pan.
  6. Scramble in an egg.
  7. Season minimally with low-sodium soy sauce.
  8. Serve warm in a small bowl.
