Cashew Butter and Chocolate Energy Bites
No-bake oat and cashew butter bites with a little honey, cinnamon, and chocolate chips. A fun, hands-on snack for older toddlers and big kids.
Ingredients
- 240 ml rolled oats1.01 cup rolled oats
- 60 ml shredded coconut4.06 tbsp shredded coconut
- 120 ml crispy rice cereal8.12 tbsp crispy rice cereal
- 60 ml ground flax seed4.06 tbsp ground flax seed
- 79 ml honey5.34 tbsp honey
- 120 ml cashew butter8.12 tbsp cashew butter
- 2.5 ml cinnamon, ground0.51 tsp cinnamon, ground
- 5 ml vanilla extract1.01 tsp vanilla extract
- 79 ml chocolate chips5.34 tbsp chocolate chips
Steps
- Add the oats, coconut, crispy rice cereal, ground flax seed, honey, cashew butter, cinnamon, and vanilla to a large bowl.
- Add the chocolate chips, then mix everything with a spoon or clean hands until the dough holds together.
- Cover the bowl and chill in the fridge for 30 minutes so the dough firms up and is easier to roll.
- Scoop about a tablespoon of dough and roll it between your palms into a small ball. Let kids help shape them.
- If the dough turns sticky, chill it again or dampen your hands with a little water, then keep rolling the rest.
- Store the bites in an airtight container in the fridge for up to 2 weeks.
