Broccoli Cheddar Quinoa Bites

Ingredients

  • 240 ml cooked quinoa, cooled1.01 cup cooked quinoa, cooled
  • 1.32 l broccoli, steamed soft and finely chopped5.58 cup broccoli, steamed soft and finely chopped
  • 2 each egg, lightly beaten
  • 120 ml cheddar cheese, shredded8.12 tbsp cheddar cheese, shredded
  • 60 ml all-purpose flour4.06 tbsp all-purpose flour
  • 2.5 ml garlic powder0.51 tsp garlic powder
  • 2.5 ml onion powder0.51 tsp onion powder

Steps

  1. Heat the oven to 350F (180C) and grease a 12-cup muffin tin well so the bites release easily once baked.
  2. Steam or finely chop the broccoli until soft, then measure it into a large mixing bowl.
  3. Add the cooked quinoa, eggs, cheddar, flour, garlic powder, and onion powder to the bowl.
  4. Mix everything together until well combined and the mixture holds together when pressed.
  5. Scoop 2 tablespoon portions into the greased muffin cups, pressing each one down gently.
  6. Bake for about 20 minutes until the edges are lightly browned and the centers feel set.
  7. Let cool slightly, then run a knife around each bite to loosen it from the tin before serving warm.
