Blueberry Overnight Oats with Lemon
Creamy make-ahead oats soaked in yoghurt and milk with juicy blueberries and a hint of lemon. A refreshing breakfast you can prep the night before.
Ingredients
- 200 g greek yoghurt7.05 oz greek yoghurt
- 120 ml milk8.12 tbsp milk
- 30 ml maple syrup2.03 tbsp maple syrup
- 15 ml lemon juice1.01 tbsp lemon juice
- 5 ml lemon zest, finely grated1.01 tsp lemon zest, finely grated
- 2.5 ml cinnamon, ground0.51 tsp cinnamon, ground
- 50 g rolled oats1.76 oz rolled oats
- 140 g blueberries4.94 oz blueberries
Steps
- Whisk the yoghurt, milk, maple syrup, cinnamon, lemon juice, and lemon zest together in a bowl until smooth.
- Slice half of the blueberries in half so their juice can flavour the oats as they soak.
- Stir the rolled oats and all the blueberries into the yoghurt mixture until evenly combined.
- Cover the bowl and refrigerate for at least 4 hours or overnight, until the oats are soft and creamy.
- Spoon into two jars or bowls and serve cold, stirring in a splash more milk if you like it looser.

Skip the maple syrup for this age, as the fruit adds enough sweetness. Mash or finely chop all the blueberries and blend the soaked oats until soft and easy to swallow.
