Banana and Peanut Butter Baked Oatmeal Cups

Soft baked oatmeal cups with banana and peanut butter. Easy to batch on the weekend and grab on a busy morning, and just right for little hands.

Ingredients

  • 720 ml rolled oats, 1 cup blended into flour3.04 cup rolled oats, 1 cup blended into flour
  • 10 ml baking powder2.03 tsp baking powder
  • 5 ml cinnamon, ground1.01 tsp cinnamon, ground
  • 2 medium banana, ripe, mashed
  • 2 large egg
  • 240 ml almond milk, unsweetened1.01 cup almond milk, unsweetened
  • 60 ml maple syrup4.06 tbsp maple syrup
  • 60 ml coconut oil, melted4.06 tbsp coconut oil, melted
  • 10 ml vanilla extract2.03 tsp vanilla extract
  • 120 ml peanut butter, smooth, unsalted8.12 tbsp peanut butter, smooth, unsalted
  • salt (to taste), for older eaters only

Steps

  1. Heat the oven to 350F (175C) and line a 12 cup muffin tin with paper liners or grease it lightly.
  2. Blend 1 cup of the oats in a blender for about 30 seconds until they form a fine flour, then stop so it does not turn sticky.
  3. In a large bowl, whisk together the oat flour, the remaining 2 cups of oats, baking powder, and cinnamon.
  4. (Optional) For older kids and adults, whisk a small pinch of salt into the dry mix to taste.
  5. In another bowl, mash the bananas well, then whisk in the eggs, almond milk, maple syrup, melted coconut oil, and vanilla.
  6. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  7. Stir in the peanut butter until it is evenly swirled through the batter.
  8. Spoon the batter into the muffin cups, filling each almost to the top.
  9. Bake for about 30 minutes until the tops are golden and set, then let cool fully before serving.

9-11mo

Offer a salt-free cup torn into small soft pieces the size of a fingertip so your baby can pick them up and gum them.

Choking safety: Break into small soft pieces and avoid letting your baby bite off large chunks. The peanut butter is baked in, but a thick smear can still be sticky.

Cut each cup into halves or quarters and serve a piece at a time so it stays manageable for new chewers.
