Banana Apple Breakfast Muffins

  • 5 ml cinnamon, ground1.01 tsp cinnamon, ground
  • salt (to taste), for over-1s and adults
  • 240 ml apple, peeled and finely diced1.01 cup apple, peeled and finely diced

Steps

Make the Batter

  1. Preheat the oven to 350F (175C) and line a 12-cup muffin pan with paper liners or lightly grease it.
  2. Whisk the mashed banana, applesauce, eggs, maple syrup, melted butter, and vanilla in a large bowl until smooth.
  3. In a separate bowl, whisk together the flour, oats, baking powder, baking soda, and cinnamon.
  4. (Optional) For over-1s, whisk a small pinch of salt into the dry ingredients for a little extra flavor.
  5. Pour the dry mixture into the wet mixture and stir gently until just combined, taking care not to overmix.
  6. Fold in the diced apple until it is spread evenly through the batter.

Bake

  1. Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.
  2. Bake for 20 to 25 minutes, until a toothpick inserted into the center comes out clean.
  3. Cool the muffins in the pan for 5 minutes, then move them to a wire rack to cool fully before serving.

9-11mo

Offer a finger-size strip of muffin so your baby can self-feed. Break off small soft pieces if needed and skip any firm edges. These contain maple syrup, so serve only as an occasional treat.
