Banana Apple Breakfast Muffins
Moist, fluffy muffins sweetened with banana, applesauce, and a little maple syrup. An easy make-ahead snack or breakfast the whole family can share.

Steps
Make the Batter
- Preheat the oven to 350F (175C) and line a 12-cup muffin pan with paper liners or lightly grease it.
- Whisk the mashed banana, applesauce, eggs, maple syrup, melted butter, and vanilla in a large bowl until smooth.
- In a separate bowl, whisk together the flour, oats, baking powder, baking soda, and cinnamon.
- (Optional) For over-1s, whisk a small pinch of salt into the dry ingredients for a little extra flavor.
- Pour the dry mixture into the wet mixture and stir gently until just combined, taking care not to overmix.
- Fold in the diced apple until it is spread evenly through the batter.
Bake
- Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.
- Bake for 20 to 25 minutes, until a toothpick inserted into the center comes out clean.
- Cool the muffins in the pan for 5 minutes, then move them to a wire rack to cool fully before serving.
