Baked Mushroom and Cheese Dip

A warm, creamy baked dip of soft roasted mushrooms folded through melty cheese, great for sharing and easy to soften for little ones.

Ingredients

  • 250 g mushroom, thickly sliced8.82 oz mushroom, thickly sliced
  • 30 ml olive oil2.03 tbsp olive oil
  • 120 ml mayonnaise8.12 tbsp mayonnaise
  • 125 g sour cream4.41 oz sour cream
  • 240 ml cheese, grated1.01 cup cheese, grated
  • 60 ml parmesan, grated4.06 tbsp parmesan, grated
  • salt (to taste), for over-1s and adults only

Steps

Roast the Mushrooms

  1. Heat the oven to 200C (400F) and thickly slice the mushrooms into even pieces.
  2. Place the mushrooms in an oven-proof dish, drizzle with the olive oil, and toss to coat evenly.
  3. Bake the mushrooms for 25 minutes until softened and lightly golden.

Mix and Bake

  1. Remove the dish from the oven and stir the mayonnaise, sour cream, cheese, and parmesan through the mushrooms.
  2. Reduce the oven to 150C (300F) and bake for 20 to 30 minutes until bubbling at the edges and the cheese is melted.
  3. Let the dip cool slightly, then serve with soft bread or crackers. For over-1s and adults, add a pinch of salt to taste.

12-18mo

Offer a very small amount and chop the mushrooms finely so they break down easily. Spread thinly on soft bread or pre-load onto a spoon. This dip is rich and salty from the cheese, so keep portions tiny.

Choking safety: Chop mushroom pieces small; serve on soft bread rather than hard crackers, which can be a choking risk at this age.

18-24mo

Serve a small portion spread on soft bread strips or soft toast fingers. Chop any larger mushroom pieces so they are easy to chew.
