  • 240 ml flour, white whole wheat1.01 cup flour, white whole wheat
  • 2.5 ml baking soda0.51 tsp baking soda

  • 180 ml applesauce, unsweetened12.17 tbsp applesauce, unsweetened
  • 60 ml brown sugar4.06 tbsp brown sugar
  • 1 large egg
  • 5 ml apple cider vinegar1.01 tsp apple cider vinegar
  • 2.5 ml vanilla extract0.51 tsp vanilla extract
  • salt (to taste), for over-1s and adults
  • butter (optional), melted, for coating
  • sugar (optional), for the topping
  • cinnamon (optional), ground, for the topping

Steps

Mix the Batter

  1. Preheat the oven to 375°F (190°C) and line or lightly grease a 24-cup mini muffin pan.
  2. In a large bowl, whisk together the applesauce, butter, sugar, brown sugar, egg, apple cider vinegar, and vanilla until smooth.
  3. Add the flour, baking soda, baking powder, and cinnamon to the bowl and gently fold until just combined, taking care not to overmix.
  4. For older toddlers and adults, you can add a small pinch of salt to the dry ingredients to taste.

Bake

  1. Spoon the batter into the muffin cups until each is about two-thirds full.
  2. Bake for 12 to 15 minutes until the tops are just golden and a toothpick comes out clean.
  3. Let the muffins cool in the pan for a few minutes, then move them to a rack to cool fully before serving.

Optional Cinnamon-Sugar Coating

  1. Optional: melt the extra butter in one small bowl and stir the topping sugar together with the cinnamon in another small bowl.
  2. Optional: dip each cooled muffin in the melted butter, then roll it in the cinnamon-sugar until lightly coated all over.

12-18mo

Serve a plain muffin with no sugar coating. Break or cut it into small bite-size pieces and offer a few at a time. These contain added sugar, so keep them as an occasional treat.

Offer a plain muffin broken into bite-size pieces, or a lightly coated one for a special treat. Limit added sugar at this age.
