Ingredients

  • 1 head of bok choy
  • 1 cup zucchini
  • 0.5 cup carrot
  • 1 cup chickpea
  • 0.75 cup barley
  • kimchi
  • tablespoon gochujang
  • 1 tsp toasted sesame oil
  • 0.5 tsp brown sugar
  • teaspoon water

Steps

  1. Heat 1 teaspoon canola oil in a skillet over medium high heat. Add bok choy and a pinch of salt. Stir-fry for about 3-5 minutes, or until greens are wilted and stalks are crisp-tender. Remove from pan.
  2. In the same skillet, repeat the whole process with carrots and zucchini, cooking for about 2 minutes.
  3. Place in a bowl along with barley, chickpeas and kimchi.
  4. Add the gochujang seasoning and mix thoroughly. Serve immediately.
