Ingredients

  • 1 yellow onion
  • 8 oz cremini mushroom
  • 1 cup dried green lentil
  • 14.5 oz can no-salt-added tomato
  • 3 garlic clove
  • 1 tsp ginger
  • tablespoon red curry paste
  • 2 cup low sodium chicken stock
  • 2 boneless
  • 0.5 cup coconut milk
  • lime juice

Steps

  1. Add all the ingredients up to the chicken breasts to the slow cooker.
  2. Combine thoroughly. Place chicken on top.
  3. Cover and cook on low for 6 hours. Shred the chicken with a fork and mix into the curry. Stir in coconut milk. Serve.
