Fluffy Lemon Millet

Ingredients

  • 0.5 cup millet
  • 1.5 cup water
  • salt as needed
  • 1.5 tbsp oil
  • 0.5 tsp mustard seed
  • 1 bengal gram
  • 1 tbsp skinned black gram
  • 0.25 cup peanut
  • 1 pinch asafoetida
  • 1 green chili
  • 1 red chilli broken
  • 0.13 tsp turmeric
  • 1 tsp ginger
  • 1 sprig curry leaf
  • 1 lemon

Steps

  1. Wash millet thoroughly and drain. Add to a pot with 1.5 cups water and salt. You can soak it for a bit or skip this step.
  2. Cook on medium heat until water is absorbed and millet is slightly soggy. Cover and simmer on low heat until fully cooked. Fluff with a fork and let cool completely.
  3. Heat oil in a pan. Add mustard seeds and let them splutter. Then add chana dal, urad dal, peanuts, and red chili.
  4. When the dals turn golden, add curry leaves, ginger, and green chili.
  5. The curry leaves will turn crisp quickly. Add turmeric and asafoetida. Pour in 3 to 4 tablespoons water and cook until it evaporates. This softens the dals and brings out the spice flavors.
  6. Add the cooled millet and squeeze in lemon juice. Mix well.
  7. Serve with yogurt, vegetables, papad, or pickle.
