Fluffy Lemon Millet
Fluffy millet tossed with lemon juice, crispy lentils, and warm spices.

Ingredients
- 0.5 cup millet
- 1.5 cup water
- salt as needed
- 1.5 tbsp oil
- 0.5 tsp mustard seed
- 1 bengal gram
- 1 tbsp skinned black gram
- 0.25 cup peanut
- 1 pinch asafoetida
- 1 green chili
- 1 red chilli broken
- 0.13 tsp turmeric
- 1 tsp ginger
- 1 sprig curry leaf
- 1 lemon
Steps
- Wash millet thoroughly and drain. Add to a pot with 1.5 cups water and salt. You can soak it for a bit or skip this step.
- Cook on medium heat until water is absorbed and millet is slightly soggy. Cover and simmer on low heat until fully cooked. Fluff with a fork and let cool completely.
- Heat oil in a pan. Add mustard seeds and let them splutter. Then add chana dal, urad dal, peanuts, and red chili.
- When the dals turn golden, add curry leaves, ginger, and green chili.
- The curry leaves will turn crisp quickly. Add turmeric and asafoetida. Pour in 3 to 4 tablespoons water and cook until it evaporates. This softens the dals and brings out the spice flavors.
- Add the cooled millet and squeeze in lemon juice. Mix well.
- Serve with yogurt, vegetables, papad, or pickle.
