Ingredients

  • 500 g apple
  • 1 tbsp oil
  • 1 g cinnamon
  • 2 part star anise
  • 4 clove clove
  • 1.5 tbsp ginger
  • 0.25 tsp red chili powder
  • 1 tsp ground fennel
  • 1 tsp ground cumin
  • 3 tbsp brown sugar
  • 3 tbsp sugar
  • 0.25 tsp ground pepper
  • 0.5 cup apple cider vinegar

Steps

  1. Rinse the apples well under running water and peel them. Chop them finely. You can also use a chopper.
  2. Pour oil or ghee to a hot pan or pot. Add the spices - cloves, star anise & cinnamon.
  3. When they begin to sizzle add the ginger & let it fry for a minute. Then lower the flame and quickly stir the red chilli.
  4. Add apples, sugar, cumin powder, fennel powder, pepper and vinegar.
  5. Stir and cook covered on a low heat until the apples turn tender.
  6. Then open the lid and cook further until almost all the liquid evaporates.
  7. Mash a small portion of this mixture with the spatula to give a thicker texture to the apple chutney.
  8. Turn off the stove when most of the excess moisture evaporates. (refer video or pics below)
  9. Cool the apple chutney completely and store it in a clean dry glass jar. It keeps good for several months if you keep it in a dry shelf.
