Pork and Ginger Congee

Creamy rice porridge with tender pork and warming ginger. A gentle, nourishing breakfast that's easy to digest and perfect for little ones.

Ingredients

Rinse the rice under cold water, then combine with 4 cups of water in a medium saucepan.
Bring to a boil over high heat, stirring once, then reduce to the lowest heat and cook uncovered for 30 to 35 minutes, stirring every 5 to 8 minutes, until the rice breaks down completely into a thick, smooth porridge.
Add a splash more water if needed to keep it pourable.
In a separate small pan, cook the ground pork over medium heat, breaking it into very fine crumbles, for 4 to 5 minutes until cooked through with no pink remaining. Stir in the grated ginger in the last minute.
Stir the cooked pork into the congee along with the sesame oil.
For 9-11 months, blend or mash to a smooth consistency. For 12 months and up, serve as a soft, thick porridge. Garnish with spring onion for toddlers 18 months and older if desired.

Blend or press through a sieve for a fully smooth porridge. Pork must be blended in completely.

Choking safety: Blend fully smooth. Pork must be completely incorporated with no firm crumbles.

12-18mo

Serve as thick, soft congee with very finely crumbled pork. Child can self-feed with a spoon.

18-24mo

Normal congee consistency is ideal. Add a small drizzle of extra sesame oil for healthy fat.

2-3y

Garnish with thinly sliced spring onion if introducing alliums. Serve with soft steamed bok choy on the side.
