Baby-Friendly Chicken Tinga

Tender shredded chicken simmered in a mild tomato sauce. Reserve plain chicken for baby, then add salt and toppings for the rest of the family.

Ingredients

  • 6 chicken thigh
  • 4 roma tomato
  • 1 clove garlic
  • 0.5 white onion
  • 1 cup chicken broth
  • olive oil
  • salt

Steps

  1. In a large pot, add water to cover the chicken. Bring to a boil, add chicken, and cook 15-20 minutes until cooked through. Set aside, reserving cooking water.
  2. In a blender, combine the Roma tomatoes, garlic, onion, and chicken broth. Blend until smooth.
  3. In a large pan, add a touch of olive oil and pour in the blended sauce. Bring to medium-high heat and cook, stirring, until the sauce thickens slightly.
  4. Use two forks to shred the cooked chicken.
  5. Before adding salt, take a small portion of plain shredded chicken for baby. Add the rest of the chicken to the pan and simmer for a few minutes.
  6. Add salt to taste for the family portion. Serve with warm corn tortillas, sour cream, and avocado.
