Roasted Veggie Hummus

Ingredients
- 3 carrot
- 1 sweet potato
- 0.25 cup canned chickpea
Steps
- In a medium saucepan, bring 2 inches of water to a boil. In a steamer basket, add the sweet potato cubes and carrots, place the basket over boiling water, and cover. Steam for 12-15 minutes or until all ingredients are tender when pricked with a fork. Remove from heat and let cool slightly. Reserve steamer water.
- Transfer the cooked carrots, sweet potato and chickpeas into a blender or food processor.
- Puree for 2 minutes, or until smooth, adding reserved steamer water in 1/4 cup increments as needed.
